Crazy Cooking Challenge- Fried Chicken Style

This has been one crazy week. I'll fill you in later on that. But now, I'm filling you up with this

When I heard that this month was going to be the Fried Chicken challenge I knew exactly what I wanted to do, but then I remembered that we had to find our recipe from another wonderful Blog out there in Blogland. Here's the one that I was going to use originally from My Name is Snickerdoodle, and trust me this is a GREAT recipe!
But then, to my surprise, the game changed!
Now we're allowed to use any Fried Chicken recipe we'd like. I knew exactly where to go!
A few years back Dear Hubby and I bought these books, and one of my most favorite recipes in it is the fried chicken.
In fact, I've used it so many times, my book falls open to that page every time I take it out of the cabinet!
I've had to change up the recipe a little bit, but it's still the perfect copy cat recipe for KFC Original Recipe Fried Chicken.
Here's how it's done!

3 cups Crisco vegetable shortening
1 egg, beaten
2 cups milk
1 1/2 tablespoons salt
2 teaspoons black pepper
1 teaspoon Accent
4 large boneless skinless chicken breasts

Place the shortening in a large electric skillet or frying pan. Heat to medium high heat (about 350).
In a small bowl combine the egg and milk.
In a seperate bowl, combine the dry ingredients.
Dip each piece of chicken into the milk until fully moistenend.
Roll the moistened chicken in the flour mixture until completely covered.
Dip each piece back into the milk mixure and then back into flour mixture once again.
Place each piece into the melted oil.
Allow chicken to cook on each side about 15 minutes (do not keep turning, you only need to turn it a couple of times)
Remove from pan and allow to drain on a cooling rack.

Aside from my grandmother's and mom's fried chicken recipes this has to be my all time favorite recipe. It's amazing alone, on a sandwich with some mayo and pickles, or served up next to a big heaping pile of mashed potatoes,  I really hope that you enjoy this one as much as I do!

Crazy Cooking Challenge-Fruit Smootie Edition

It's round two for me in this Crazy Cooking Challenge, and this month's Challenge was Fruit Smooties & Shakes.

This was a tough one for me believe it or not!
Although I've been known to smootie up anything, I had a hard time finding something unique and different that would not only catch my attention, but also my taste buds.
Then I found this recipe.
 
 
Honeydew Smoothies

Now, not only does she have some of the cutest kids ever, Janiene
is full out creative and crafty!
I just happened to stumble across her page recently and was so excited when she linked up to Sweet & Simple Sunday. I love finding new friends in the blogosphere (well in real-life too, but blogosphere friends totally rock!)
Anyways, I was even more excited when I realized that I had most of the ingredients on hand for these Honeydew Smooties.
And since I've realized that I'm an adult and needed to have appropriate working appliances in my home, I actually have a blender I'm totally happy with.
(Who knew that Strawberry Daquiri's could break down a blender so fast?! I think it was my way of reliving the time spent at the Tiki Bar on our Honeymoon)
Anywho, here's what you'll need for this sweet & summery drink
 
Scoop out the flesh of 1/2 of an organic honeydew melon
1 cup organic plain whole milk yogurt
2 tbsp honey
1-1/2 cups ice

Now just blend her up and enjoy! That's it! Smoothie Simplicity!
Now I do have to admit, I changed it up a bit, but only because I didn't have the plain organic yogurt in my fridge. I had a container of peach Oikos Greek yogurt so that's what I mixed it and it was great! I'm sure that any kind of yogurt would work just perfect in this recipe.

Crazy Cooking Challenge

It's Crazy Cooking Challenge Day!
I've been anticipating this day since I signed up to be part of this.
I had no idea what I was getting into, all I knew was that I couldn't wait to see what the challenge had in store.
This month's Crazy Cooking Challenge
is
Grilled Cheese Sandwiches
Here's what I'm cooking up for today
The Task:
Find a recipe online, on any blog, for any grilled cheese sandwich.
Make it.
Blog about it.
The Rules of The Game:
The recipe must be from a personal blog. No professionals allowed.
It must contain bread.
It must contain cheese.
That's it.
I found my recipe on Galley Kitchen.
As I mentioned a few posts ago, Suzanna at Galley Kitchen decided to do a tribute to the ever popular, ever cheesy, Grilled Cheese Sandwich.
I love traditional Chicken Cordon Bleu so squeezing it between two slices of toasted french bread just enhanced its appeal 100 fold for me.
Suzanna has so many great recipes on her blog. You have got to go check it out!

Chicken Cordon Bleu Grilled Cheese Sandwiches

Ingredients
  • 2 slices white bread ( I decided to go for french bread)
  • Butter
  • Half a roasted chicken breast, thinly sliced
  • 2 slices ham
  • 2 slices Muenster cheese (I used traditional swiss cheese)
  • 1 tablespoon chopped green onions
  • Roasted Garlic Mayo (recipe below)
Roasted Garlic Mayo
  • 1 clove roasted garlic
  • 1 tablespoon mayo
  • 1/8 teaspoon lemon juice
  • Pinch of salt
Instructions
  1. Smoosh together the roasted garlic, mayo, lemon juice, and salt.
  2. Top each slice of bread with a slice of cheese.
  3. Spread one cheese slice with roasted garlic mayo.
  4. Top with ham, chicken, and green onions.
  5. Close up the sandwich, and butter the outsides of the bread.
  6. Griddle on medium heat until the cheese is melted and the bread is golden brown.
